Hi All,

Here is the link for the Lemon Ricotta Cookies. I use my Meyer lemons for this recipe. So Yummy. They are constantly asked for and do not last. Enjoy:)

Mary Jane, I am so glad you found the time to bake these cookies. Hope you and your family enjoys them as much as mine. I baked the Lemon Ricotta cake. It is yummy too!

Delicious!! Almost makes me want to try again for a lemon tree. The one I got last year perished. I am still disappointed and cannot figure out what I did wrong so I'm scared to get another. But I am headed to a Traders Joe store tomorrow after my daughter's medical appointment and they have a bag of Meyer lemons. I am t noted to cheat and purchase already grown lemons! Lol

Notice early one there was one missing. Lemon ricotta cookies using my first ripe lemon off my tree, along with some juice from two of my limes to make 6 T total juice. I noticed the zest from homegrown lemons is much more dry and tasty. My lime tree does seem to be more prolific with a couple dozen blooms at the moment, but there are still several lemons ripening.

Oh man, does that look good or what? Never heard of this before:
"Fiori di Sicilia which is a blend of vanilla and lemon and is delicious. Instead, you can easily substitute 1/2 teaspoon vanilla extract and 1/2 teaspoon lemon extract."

Mary Jane, my violin playing daughter loves these. They can become a very bad habit. They have such a light texture, bet you can't stop at one!!!
Had to "buy" ricotta yesterday so I can make some this weekend. I love my Meyer. Use it for everything from these cookies and baking to fish and lamb.
